    This refreshing mint, cucumber and lemon cooler combines seasonal ingredients with minimal energy use, offering an environmentally friendly alternative to bottled soft drinks while helping you stay hydrated during periods of extreme heat.

    Record-breaking temperatures have become an increasingly familiar feature of European summers. As climate change drives longer and more intense heatwaves, adapting our daily routines—including what we eat and drink—is becoming an important part of living sustainably.

    Increase hydration and decrease cooking heat

    Choosing seasonal, plant-based ingredients can be part of that adaptation. Foods with a naturally high water content help maintain hydration, while recipes that require little or no cooking reduce household energy use and avoid adding unnecessary heat to our homes.

During periods of extreme heat, public health agencies recommend drinking plenty of fluids, avoiding excessive alcohol and seeking ways to stay cool. Recipes using seasonal, water-rich ingredients can help support hydration while also reducing the energy needed for cooking indoors.

    Carbon footprint

    This recipe has an extremely low carbon footprint, relying almost entirely on seasonal fruit, vegetables, herbs and tap water.

    The full recipe (approximately four servings) has an estimated carbon footprint of 0.24 kg CO₂e, while each serving generates approximately 0.06 kg CO₂e.

    That is roughly equivalent to driving around 350 metres in an average petrol car per serving, or approximately 1.4 km for the whole jug.

    The lemon contributes the largest share of emissions because it is commonly imported, while cucumber accounts for most of the remaining footprint. Mint has very little impact, particularly when home-grown, and tap water contributes almost nothing.

    Mint, cucumber and lemon cooler

    Preparation time: Around 10 minutes

    Ingredients:

    • 1 medium cucumber, sliced (preferably home-grown or locally grown)
    • 1 unwaxed lemon, sliced
    • A generous handful of fresh mint leaves
    • 1 litre cold tap water
    • Ice cubes (optional)
    • A small drizzle of local honey or maple syrup (optional)

    Method

    1. Wash the cucumber, lemon and mint thoroughly.
    2. Slice the cucumber and lemon into thin rounds.
    3. Lightly crush the mint leaves between your hands to release their natural oils.
    4. Add all the ingredients to a large jug.
    5. Pour over the cold water and stir gently.
    6. Leave to infuse in the refrigerator for at least 30 minutes, or longer for a stronger flavour.
    7. Serve over ice if desired and garnish with additional mint leaves.

    • Elderflower cordial
    • Lemon balm
    • Strawberries
    • Basil
    • Sparkling water

    For an even lower-carbon version, replace imported lemons with freshly picked gooseberries, rhubarb cordial or lemon balm grown in your own garden.

    • Don’t throw away the cucumber afterwards—add it to a salad
